Specialities
This natural food, handed down for 600 years, was favored by Tokugawa Ieyasu. Koji or malted rice is added to the steamed soybeans, dried in the sun, then some chopped ginger is added, and soaked and left in salted water for one year. The production of fermented soybeans is time consuming, but it tastes good on top of rice or as chazuke (boiled rice with tea poured over it).
