Shiki-no-table offers Kanazawa's feast
This restaurant is run by Aoki Etsuko, a local cuisine researcher. The menu consists of mainly traditional dishes, but the restaurant's own arrangement of ingredients in season are recommended as well. Shamoji-ya
A communal kitchen for Kanazawa citizens. Located near the Omicho Market, the restaurant cooks food bought by the customers. The key to selecting good ingredients is "to look for what is in season. After all, seasonal food are the most inexpensive and the best tasting. Cooking charge would be the same for good and bad picks. So it would be best to find good ingredients. The price sets the value."
