soba
The most famous local food in Izumo is probably Izumo soba (noodles). Its dark color and strong flavor are the result of grinding soba grains with the outside skin, and that makes the unique characteristics of the local specialty. The noodles, served in three levels of lacquered containers with partitions, are called warigo-soba. Unlike regular soba noodles, which you dip in a sauce, you pour the sauce on top of the noodles to eat along with leek, grated radish mixed with red pepper, and some dry seaweed.
