Citron, a Shikoku product, is kneaded into bean jam and wrapped with wet sponge cake. Although this cake is a compromise between the Japanese and Western styles, it contains no oil and grease but tastes slightly sweet. Tart which was a tea cake secretly hidden by the Matsuyama clan because of its elegant taste.
